这句话里提到了4种物质,黄酮类,免疫作用的酶,脂肪酸,抗体。黄酮类化合物和脂肪酸我不是非常了解。我只知道黄酮类化合物有的是有毒的,有的是有营养的(比如人参的有效成分),不能一概而论。
酶和抗体可以凑一起说。这两个物质都是提高免疫力的,属于蛋白质。但是这两个物质都容易变性,无论用任何加热方式,只要超过一定温度就会失去活性。这两个物质只存在于母乳之中。母乳最好直接喂给小孩。如果冷藏后加热,推荐用温水泡热了再喂。用微波炉的方式,会使局部温度过高导致”部分“抗体和酶失活,同样用煤气加热的方式,或者用开水烫牛奶也会导致这个情况。所以这个失活并不是微波造成的,而是加热方式造成的,并不是微波的过错。 |
